Here in Indiana, this beautiful cut of beef is still referred to as a New York Strip. However, Dan and Lynne (and fellow foodies) know that it would be even better if named “Indiana Strip Steak.” Perhaps the easiest cut to prepare, it requires good seasoning such as freshly ground black pepper and Himalayan sea salt and high heat. We suggest letting the 2 steaks thaw overnight in the fridge before preparing. Add your favorite steak sauce or condiment for a little extra zing. Cut to 1-inch thickness, you’ll enjoy biting into the even marbling. Because it is premium Charolais, it naturally has a ¼ inch trim of fat.
